Pudding part
Mix in order given.
1 cup ground or grated raw carrots
1 cup ground or grated raw potatoes
1/2 cup raisins
1/2 cup currants
1 cup flour
1 cup sugar
1/2 cup melted butter
1 tsp soda dissolved in a little hot water
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp cinnamon
pinch of salt
Steam in steamer for 3 hours.
Serve hot with lemon sauce.
Lemon Sauce Recipe
Make shortly before serving the Carrot Pudding.
1/2 cup sugar
1 tbsp cornstarch
1/8 tsp salt
1/8 tsp nutmeg
1 cup boiling water
2 tbsp butter
1 1/2 tbsp lemon juice
Mix sugar, cornstarch and nutmeg.
Gradually add water and cook over low heat until thick and clear.
Add butter and lemon juice.
Blend thoroughly.
